Salmon Ala Danger/ Fireside Salmon with Honey and Barley

4 (4-ounce) skinless salmon fillets (note: should be decent thickness, ask for center cut or steaks)
1 tablespoon toasted sesame seeds, divided
3 tablespoons honey
1 1/2 teaspoons low-sodium soy sauce
1/4 cup toasted sesame oil
1/4 cup rice vinegar
1/4 teaspoon chili flakes
dash of RedBoat Fish Sauce
1 cup Pearl Barley- boiled 35 mins in salted water till tender
1/4 cup chopped scallions
1/4 cup chia seeds
1 lemon zested
Mix all of the sauce ingredients together in jar and shake vigorously. Allow to sit overnight.
Create 4 large sheets of tinfoil, large enough to double up and create enclosed parcels for the salmon and barley.
Mix, barley, scallions, chia and lemon zest together.. Divide evenly between the 4 tin foil sheets.
season with a little of the sauce (reserve leftover sauce for final seasoning). Place Salmon on top of the mix, draw up sides of foil and pour sauce over top of salmon. Enclose parcel to make a enclosed package with folds on the top side.
Note: these parcels can be made ahead if your cooking within 6 hours, beyond that please assemble in the field.
Stoke fire to create a nice coal bed of embers.. place large rock in middle of embers. Salmon-Barley parcels can be set on top of the rock surrounded by the coals for 12-15 mins.
